Less well known, this tea kindles people’s curiosity. It takes its name neither from the colour of its liquor nor its leaves, but because it was once precious and worthy of an emperor, whose emblematic colour is yellow. Its transformation is slightly more complex than that of green tea and it is made of superior grade leaves. This makes it a rare and somewhat expensive tea. Its short fermentation process, which provides a slightly acid character to its leaves, is what defines the yellow tea.
